Black olive Monkfish
Monkfish, dehydrated black olive, olive oil, seasonal vegetables
Legendary three Michelin star chef Michel Bras is the inspiration for this dish. Dehydrated black olives are powdered and blended with premium olive oil which forms the poaching liquor for the Monkfish. Blanched seasonal vegetables are all that completes this dish. Chef Michel bras has achieved perfection in simplicity with this dish and it is truly one of my favourite dishes to eat. A great deal of practise has gone into perfecting this dish before offering it on my menu.
