Coffee and Chocolate
Chocolate delice, caramelized milk, masala mascarpone mousse, coffee and chocolate soil, espresso ice cream
One of the best dessert combinations has to be coffee and chocolate. This is my rendition of the classic pairing. Chocolate delice made with 66% cocoa Valrhona chocolate is the single best chocolate treat I have found. Valrhona chocolate is the starting point for all chocolate components in this dish and indeed all chocolate components throughout the entire menu. Masala mascarpone mousse teases of tiramisu and the espresso ice cream completes the picture.
