Duo of Lamb
Duo of Lamb : Lamb sirloin fillet, shoulder terrine, brussel sprout & almond chiffonade, kumara & orange puree, Portobello mushrooms, lamb jus, mint pesto, fresh herb crumb
This dish to a good pinot noir is what my duo of beef is to a decent shiraz. We start off with First Class lamb sirloin backstrap which is seared and roasted to a perfect medium rare. The lamb shoulder terrine is infused with garlic and rosemary and this works in perfectly with the kumara and orange puree. The mint pesto, lamb jus and fresh herb crumb complete the picture.
