This is the dish that granted me passage through the masterchef auditions. Two years later it has had the benefit of refinement and is well qualified to be on the Private Fine Dining Menu. A favourite among friends and clients alike. It has freshness, crunch, saltiness, a little sweetness from the orange and a rich citrus finish from the lime hollandaise. Open a bottle of pinot gris from the Alsace region
