Pork and Parfait
Pork crackling tuille, chicken parfait, pear gel, fennel & apple micro slaw, apple vinegar caramel
This dish is best suited as an entree or as a course in a degustation menu due to its rather rich nature. I have to thank Heston Blumenthal for the parfait recipe and method, it should come as no surprise that it is the best parfait I have found so far. The fennel and apple slaw balance the indulgent crackling tuille and parfait, the pear gel and apple vinegar takes care of the sweet and tart balance.
