Sweet Miso Pork Belly: Braised pork belly, red den miso, sugar snaps, daikon hay, wasabi soba
Harmony Free Range Pork belly is braised at low temperature for four hours in a miso master stock and then pressed. Japanese red den miso is used as a condiment and daikon is microplaned and deep fried to provide texture and flavour. Sugarsnap peas are flash blanched and the organic soba noodles are served at room temperature. A bowl of iced tsuyu stock is provided for dipping the soba noodles.
