Wagyu, quail egg yolk, croissant, shallot, rocket pesto
This is my take on a classic French dish. This Wagyu tartare dish consists of croissant wafers, a Quail yolk, brunoise shallot and rocket pesto. You can combine the components yourself and enjoy every mouthful just the way you want it.I use First Light Wagyu with a marble grade of 8+. I source all of my meat from The Neat Meat company and their First Light Wagyu products are the best.
